"Yellow is the colour of my true love's hair In the morning when we raise" I think it is about girlfriend/fiancee/wife, somebody who shares bed, house and, well, life, good and bad with him, first person he sees in the morning. That could also explain why he says "we" instead of "I". "Blue's the colour of the sky In the morning when we raise" I think he simply wants to say how he loves morning; end of night, beginning of new day, sun, life, etc. He is obviously an optimist. "Green's the colour of the sparkiln' corn In the morning when we raise" That could be about innocence and beauty of nature and country life, about enjoying in small, simple things.
