The first part references the "fun fact" phenomenon that our vision is upside down but then reversed by out brains. As such, I believe that he part about the lack of color references the fact that black is perceived as black because, unlike any true color, it absorbs light instead of reflecting it selectively. I believe that the second bit is simply saying that, although it appears to be black, in reality it's "bursting at the seams" because it's absorbed the entire color spectrum.

He's using these two commonly propagated little known facts as a metaphor, but I'm not quite certain what that metaphor is.

I love what you have to say about this. I recognized what he was saying in terms of his brain correcting his vision, but I had never thought of the reference to color. In addition, I think that the metaphor that he is trying to convey with these facts is that she perceives their relationship to have been dull and bland; When, in his mind, he thought it was extraordinary being with her. He had trouble expressing himself and his feelings but he is trying to reassure her that they WERE there and that they were very strong.
