I always thought that it was meant as "new car" with "mint" used in the sense of new.
His perfect love is like a brand new car...when you first begin a relationship everything is new and beautiful. Then the "new car smell (a.k.a. excitement) goes away and you start to notice the things you don't like.
The car aspect could also plainly be interpreted as the two lovers spending a good time in a car, frolicking until the sun comes up.. ;)

This song is super amaaazing. It's so happy and upbeat. I adore this song.
I mean, obviously he's feeling happy during the song. But this:

It seems like he wants the feeling to go on forever, but it won't. Again, this is only what the song means to me, it probably didn't mean that when Robert Smith wrote it, but I think too many people on this website concentrate too much on trying to decipher what the song meant to the artist(s) who wrote/performed it, as opposed to just looking at what it means to you. Songs can have a lot of different meanings, imo.
