As to the "I don't speak your Americano/Languageono/Jesus Cristo" I think that's just her refusing to use the type of rhetoric that is used to justify the laws. Like how christianity is used to justify the anti-gay rights laws and how the notion of America and and the criticism that immigrants get for not knowing how to speak english are used to discriminate against them. Also, languageono is just a play on the word language. In the spanish parts she just talks about the struggle for immigrants/gays and how both gays/immigrants fight for their rights and love and how she's there supporting a fighting along with them.
Also remember, Gaga said that she wrote this song as a response to the Arizona immigration laws, so that pretty much explains the "Don't you try and catch me" lines.
My favorite lines are "In the mountain las campanas estan sonado, todo los chicos (chicas) y los chicos (chicas) se estan besando" I just think it creates beautiful imagery of a marriage between two people of the same sex. I REALLY HOPE THIS BECOMES A SINGLE! <333

It does remind me of Madonna's objectification of Black people and culture as it kinda comes off as this commodification of minority culture but the broader message is what is important and it's clear she does not mean for it to sound the way it may.

and not:
I don't speak your language oh no.
The first line would fit the context of the Arizona immigration law. It has this sort of condescending tone of an American trying to speak Spanish.
