In this verse, "This and who I used to be
don’t matter much at all to me
The pit you dug to plant your feet’s
a far cry from my destiny"
He's saying that he's nothing like what he thought he'd be, but he's ok because he's with her and everything has changed. His "destiny" doesn't matter anymore because of her.
Second verse "Dark and lonely is the ride
the devil always by my side
Though no match for what lies between
a thought of you, your trust for me"
He's saying that the devil is all around him, but he's no match for the love he has for her.
Third verse, "No count of gold placed in my hand
the largest find, the greatest sum
Though some would say it’d easy our pain
we know that it can’t be done"
He's saying that the money is said to be the source of happiness. But he says its not and implies that, for him, his girl is what eases his pain.

She's decided to plant herself somewhere that he doesn't see himself belonging. Ultimately, he says, "nothing can hold me back from you," but there's something sad about his voice that makes me think he is questioning if it's right.

Again... there seems to be something very sad about this. By 'though no match for what lies between,' I think that he is saying that the feelings between them, and their trust in each other - his trust in her that she trusts him, something that should never be taken for granted - is enough to overcome whatever it is that is making him feel dark and lonely.
"Though some would say it'd ease our pain
we know that it can't be done"
Here he admits they are experiencing some sort of pain, but it's still not clear what it is, but others are saying that if they let each other go, that it will ease their pain. Both participants in the relationship know, however, that nothing will ease whatever their pain is.
There's certainly more to this song than face value... but I'm not sure what it is.
