Adele has openly discussed the genesis of it saying, "Well, I wrote that song because I was exhausted from being such a bitch, with 'Rolling in the Deep' or 'Rumour Has It' ... I was really emotionally drained from the way I was portraying him, because even though I'm very bitter and regret some parts of it, he's still the most important person that's ever been in my life, and 'Someone Like You,' I had to write it to feel OK with myself and OK with the two years I spent with him. And when I did it, I felt so freed."[4]
Adele had said that it was written on her acoustic guitar, quickly, in the wake of the break-up of her 18 month relationship with the 30-year old man she thought she would marry. A few months after their split, he had gotten engaged to someone else. "We were so intense I thought we wouldn't work. But that was something he never wanted ...So when I found out he does want that with someone else, it was just the horrible-est feeling ever. But after I wrote it, I felt more at peace. It set me free ... I didn't think it would resonate ... with the world! I'm never gonna write a song like that again. I think that's the song I'll be known for."[5] She also said that "I wrote that song on the end of my bed. I had a cold. I was waiting for my bath to run. I'd found out that he'd got engaged to someone else."[6]

I think it's been pretty widely accepted that this is, in fact, about her relationship with John Mayer. On one hand, John was a douche for treating a young woman, a teenager, like this. On the other hand, he did have a reputation for being a womanizer and Taylor was still old enough to have known better and stayed away from him.

Maybe I'm focusing too much on just one portion of the song, but this is what I've always thought. And I didn't read all the comments so maybe this has already been said, but here it is anyways.

"The remainders of a shooting star
Landed directly on our broke-down little car
Before then we had made a wish
That we would be missed
If one or another just did not exist"

Here, I think Brock is saying that when it comes to a romantic relationship, you want to find someone who you would miss if they never existed. I don't feel this way about someone romantically and I never have (which is the reason for a couple of my break ups in the past), but I do in a platonic way towards my best friend. If she did not exist, if I had never met her then I believe there would be a gaping hole in my life. When it comes to love that's what people are looking for: someone who, if they did not exist, would cause you to feel an absence in your life. So, when Brock says, "That's what I'm/we're waiting for" he means that both he and his current partner are searching for someone that fits this description--and they haven't found it in each other; hence the lines "They both tell me that we're better than this" and " I'm very sorry".
